Twice Baked Potato

From Jeremy's mom's kitchen...

Whole potatoes (1-2 more than the # of people eating)
1/4 cup soft or melted butter
4 oz. sour cream
salt & pepper
shredded cheese


Bake potatoes at 375 degrees for 1 hour.
Cut in half and scoop potato out - leave some around the edges.
Mix potatoes and all above ingredients - mixture should be creamy.
Place mixture in potatoes - add cheese on top.
Bake 20-30 minutes at 350 degrees.


It's not listed, but I'm thinking some bacon would be pretty good on these guys as well!
