Sweet & Sour Pork

3 cups cubed, peeled Yukon Gold potaotes
1 cup chopped onion
1 cup water
3 lb. pork roast, trimmed
1/2 cup ketchup
4 cloves garlic, minced
3 T red wine vinegar
2 T light brown sugar
2 T soy sauce
1 tsp Dijon mustard
1/2 tsp ground black pepper
salt


Arrange potatoes and onions in bottom of slow cooker.
Place pork on top.
Spread garlic over pork.
In bowl, whisk together water, ketchup, vinegar, sugar, soy sauce, mustard, black pepper, and salt.
Pour mixture over pork.
Cover and cook on low 6-8 hours or high 3-4 hours.  
Slice pork crosswise into thin slices and serve.
