Southwestern Beef Stew

Also known as "Getta Man Stew" around here, since it was the first meal I ever 'cooked' for Jeremy...when we had only been dating a matter of days or weeks.  If I had cooked it when Jeremy had known me any better than he already did, there is a strong chance he would have never eaten it...he wasn't exactly an adventurous eater in our early days.  Luckily, we were still in that stage where it would have been awkward for him to decline something I cooked; he later admitted that he had already planned on hitting up the McDonalds around the corner as soon as he left my house. Luckily, after just a few bites, he was hooked (in more ways than one - ha!), and it turned into the first of many lessons that something new can turn into something great!

1 - 2 lbs stew meat, cut up as desired
1 onion, diced
1 can kidney beans
1 can black beans
1 can diced tomatoes
1 can diced green chilies
1 package taco seasoning mix
frozen corn or canned corn
1 cup water


Put all ingredients in slow cooker and cook on high 4 hours or low 6-8 hours.


Serve with Tostitos Scoops - many times, we end up using these instead of a spoon!
